We’ve hooked up with Zana Millen of Passa Passa London to create this epic collab.

The Jerk Duck Tantamen is a banging fusion of Caribbean flavours and a classic creamy Tantanmen. Jerk sesame tare brings the heat to this ramen, which is mixed with our homemade chicken broth and topped with confit duck.

Zana Millen’s brand Passa Passa London has collaboration at its core. It draws on Zana’s own Jamaican and Antiguan roots, as well as the diaspora of Hackney, where she was raised. The large South-East Asian community and food scene in East London has always been a source of inspiration for Zana – and was one of the reasons she wanted to collab with us.

Zana was working as a pop-up chef, and secured her first spot for Passa Passa in Peckham nightclub Tola. ‘I had this wonderful kitchen where I was able to fulfil my dream, in the middle of COVID.’

She also told us about her inspiration for the name Passa Passa London. ‘There’s a wonderful party in Jamaica where they serve world-side food, there’s lots of music running – good vibes. So it felt like a very good name.’

And this ramen massively delivers on vibes.

A star ingredient of this ramen is the home pickled cucumber. Which we pickle in house with with soy, chilli and sugar – it’s got a bit of a kick to it and it’s beyond tasty.

The bowl is topped off with a raw egg yolk garnished with Itokiri Togarashi – dried chili peppers that are shredded into thin strands. Grab some chopsticks and stir it into your steaming broth and noodles. The heat of the broth cooks the yolk and adds next-level creaminess to the broth.
