This May, we are working together with the absolutle-O-damn-G of ramen, the heavyweight NYC-based legend that is Ivan Orkin. You may know him from his Chef’s Table appearance, or for the fact he opened one of the most successful ramen joints in Japan. Now he’s heading to London and celebrating 10 years of Bone Daddies with our collab take on his iconic Breakfast Mazemen.
This ramen is brothless but rich beyond belief. Originally, Ivan made his mazemen with the New Jersey staple, Taylor Ham, but we’re putting our English edge on the plate and going the whole hog with the best of British ham hock. We’ve also paired it with the awesome Asahi Super Dry which balances the rich flavours with a refreshing hit.
As well as this awesome bowl, we’re holding a tasting event on 26 May in Bone Daddies Bond St hosted by Ivan and Tom-san themselves. We’ll be serving up an extra five collab dishes. You can grab yourself a space on the day by shooting us a message below. First come first served and spaces will go fast but we will be reserving a few spaces outside for walk-ins in case you can’t get a table, but be prepared to queue.
Let’s do this!
BREAKFAST RAMEN: Brothless ramen with rye noodles, cheddar dashi fondue, bonito flakes, spring onion, soy egg, pulled British ham hock, pickled beansporuts, aonori, percorino & topped off with Ivan’s signature roasted tomatoes – 13.5
