This October we’re going up north to Manchester for a proper northern bowl of noods. We’re working with New Wave Ramen, our favourite Mancunian ramen joint to create a proper classic ramen with our signature twist.
New Wave’s lamb Tantanmen has been one of their best-selling bowls since they opened, together we snipped things here and added things there to create the Tantanmen we’ve all been waiting for. Phil founded New Wave Ramen after years as a chef led him into ramen kitchens, and then on to becoming a noodle manufacturer. Working closely with ramen chefs across the country ignited a passion for noodles, and during the lockdown, Phil poured his knowledge into producing ramen kits, subsequently opening a permanent site in Mackie Mayor – one of Manchester’s best indoor food markets.
